If someone told me I would be adding loads of vegetables to my normal bowl of asian noodles just five years ago, I would not have believed them. But look at me now!
One thing I really appreciate about my vegan diet is just how flavorful and refreshing vegetables can be. I even find myself craving salads or noodle dishes with loads and loads of vegetables in them. It’s interesting how taste buds can change!
I wish all dishes were as easy and simple as this one. This sweet and tangy dressing comes together quickly with ingredients you probably already have in your pantry and the vegetables can be substituted to your liking. I love to make this dish when I have a bunch of vegetables leftover that need to be used. Not only do I get to enjoy this delicious noodle dish but I don’t waste any food! Shouldn’t all meals be like this? Making a delicious meal with what you already have in your fridge? I love it!
Vegetables add a crunchy texture to the silky soba noodles which is topped with a flavorful sweet and tangy sauce!

quick notes
- There are two types of gochugaru (고추가루): finely milled and course flakes. Either one would work for the sauce.
ASIAN COLD NOODLES (JAENGBAN GUKSU)
makes 2 servings
Ingredients
- 2 bunches of soba buckwheat noodles
Boil the noodles according to the package. While the noodles are boiling, start on the sauce below.
Sauce
- 1 tsp minced garlic
- 3 tbsp soy sauce
- 1-2 tbsp gochugaru (add less to your liking)
- 2 tbsp coconut sugar
- 3 tbsp orange juice
- 1 tbsp of mustard
- 2 tbsp lemon juice
- 1 tbsp sesame oil
- 1 tbsp toasted sesame seeds
Combine all ingredients together.
Vegetables (feel free to customize)
- 1/4 red cabbage, sliced
- 3 rainbow carrots, peeled and sliced
- 1/2 red pepper, sliced
- 2 radishes, sliced
- 1/2 cucumber, sliced
- 1 bunch of cilantro
Once the noodles are done, add the vegetables and pour in the sauce. Enjoy!

this looks great! (minus the cilantro..) haha for october, it’s still quite humid where i am so this looks like a refreshing meal! have you tried making this with acorn noodles? :O
