Pickled onions is a must have in the kitchen. A small amount can really brighten and accentuate the flavors of dishes like tacos, salads, rice bowls, etc.
A lot of people pickle their onions by adding vinegar, salt, sugar and onions. However, I’m not a fan of wasting half a bottle of my vinegar and adding sugar when onions naturally become sweet after pickling them!
Instead I only use two ingredients: salt and lime juice. Getting your hands a bit wet after massaging the onions might seem like a hassle but the results will make it worth it. (Plus saving an extra few bucks by not using that bottle of vinegar should give this recipe a few extra points!) Add pickled onions to basically anything. I love it on my Chickpea Guacamole or Tahini Chickpea Salad!
quick notes
- I like to reserve a few tablespoons of the lime juice and add it to the pickled onions before popping it in the refrigerator.
TWO INGREDIENT QUICK PICKLED ONIONS
Ingredients
- 1 red onion, halved and thinly sliced
- 5 tbsp salt
- 1 cup lime juice (~3-4 limes)
Combine onion and 1 tablespoon of salt in a bowl. Massage salt into the onion until excess moisture appears. Drain and rinse onion. Repeat again.
Combine 1/4 cup of lime juice, 1 tablespoon of salt, and onion into a bowl. Leave for 20 mins. Remove onion from lime juice and rinse. Repeat two or three more times until onions begin to pinken.
Place onions in jar with lime juice and store in refrigerator. Can be enjoyed immediately.
