What do you guys think of when you hear hummus? For me, I think of the comedian James Veitch. Have you guys heard of him? I recently discovered him on the Ted talk youtube channel. His skits are about the ridiculous conversations he has with spammers online — particularly the ones who ask to send money.

He tells the spammers that his business plan will be make him rich. As he gets the spammers hopes up, he finally reveals the plan is to sell…no other than hummus!

Hummus is so great! But homemade hummus is on another level. It’s fresh, creamy and cheaper! The versatility of this dish makes for a perfect base to add different types of flavors.carrot hummus

The spiciness from the gochugaru or red chili flakes balances perfectly with the sweetness of the carrots making this hummus one of my favorites!


quick notes

  • There are two types of gochugaru (고추가루): finely milled and course flakes. Make sure to purchase the finely milled powder.
  • If using dry chickpeas, make sure to soak them for at least 12 hours. Then, transfer to a pot with enough water to cover them by 3 inches and bring to a boil. Simmer chickpeas for 35-45 minutes until they are soft.
  • If using canned chickpeas, removing the skins is optional but will yield in a smoother hummus.

SPICY CARROT GINGER HUMMUS

Ingredients

  • 1 16-oz chickpea can, rinsed and drained
  • 1-2 large carrots (4.0 oz)
  • 3 tablespoons lemon juice (1 full lemon)
  • 1/4 cup tahini
  • 3/4 tsp cumin
  • 2-3 tsp gochugaru or red chili flakes (adjust to your liking)
  • 2 tsp fresh ginger, grated
  • 1 garlic, grated or pinched
  • 10 cracks of pepper
  • Salt to taste

Garnish

  • Chives or green onion
  • Sunflower seeds

Clean and peel carrots and steam for 10-15 mins until soft. Once carrots are cooled, transfer carrots to a food processor. Mix everything expect the lemon juice in the food processor. While the food processor is running, slowly add the lemon juice from the top. Add pepper and salt to taste.
