Summer rolls are the perfect summer appetizer! A delicious and refreshing way to sneak in all your vegetables – I can eat these crunchy snacks all day!
This appetizer also makes for the perfect party dish. I usually serve these rolls unwrapped, along with plates of filling options for guests and their children. People love choosing what type of vegetables they want and wrapping them up turns into a fun activity!
Wrapping them is super easy. Once you drench the rice paper in warm water, lay the rice paper flat onto your plate. Place the vegetables at the bottom of the rice wrapper. Roll the rice wrapper with the vegetables once and then fold in the sides. Continue to roll the wrapper until perfectly sealed.
Enjoy these beautiful, healthy snacks with a protein-filled peanut dipping sauce!

- Feel free to substitute and/or add other vegetables. Serve cold!
SUMMER ROLLS WITH PEANUT SAUCE
Peanut dipping sauce
- 1/4 cup peanut butter
- 1 tbsp soy sauce
- 1 tbsp lime juice or apple cider
- 1/2 tbsp garlic powder
- 1 tbsp coconut sugar
- 1/2 tbsp sesame oil
- 1/4 cup hot water
Mix together the peanut dipping sauce and set aside.
Summer rolls
- Slack of rice paper with a bowl of warm water
- 1/2 red cabbage, sliced
- 3 rainbow carrots, peeled and sliced
- 1 red pepper, sliced
- Bunch of radish, sliced
- 1 cucumber, sliced
- Bunch of cilantro
Prepare vegetables and set aside.
Drench rice paper in warm water and lay rice paper flat. Place the vegetables at the bottom of the rice wrapper. Roll the rice wrapper with the vegetables once and then fold in the sides. Continue to roll the wrapper until perfectly sealed.
Dip in peanut sauce and enjoy!
