Aren’t (vegan) biscuits the quintessential American quick bread?
Biscuits are so versatile as they can be served as a savory dish, with turkey and gravy, or as a sweet dish, with strawberries and cream.
Don’t confuse American biscuits with British biscuits, which are crunchy cookies, or scones, which are more dry and crumbly. For one, biscuits do not use yeast but baking powder as a leavening agent. This is good news as these biscuits only take minutes to make.
Secondly, the ratio between the ingredients keeps the biscuits from being dry but rather moist and soft while crunchy on the outside.
Thirdly, the ingredients to make these biscuits are probably something you have in your pantry already.
So, grab a few ingredients and lets start baking!
quick notes
- When forming the biscuits, make sure not to press the dough too flat. It is important for the dough to have some height before going into the oven.
VEGAN BISCUITS
Wet Ingredients
- 3 tbsp vegan butter
- 2 tbsp sugar
- 1/2 cup vegan milk
- 3 tbsp aquafaba
Preheat oven to 425F.
Cream vegan butter and sugar together with a hand mixer until smooth and creamy. Add in vegan milk and aquafaba and mix.
Dry Ingredients
- 1 cup (140g) all purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
Combine dry ingredients together.
Mix wet and dry ingredients together and knead.
Liberally flour your countertop with flour and transfer dough to countertop. Gently knead dough while adding more flour until dough comes together. Roughly press dough into a square and fold into lengthwise and then crosswise, to make a square. Pat the square so the dough spreads into a larger square, while still maintaining height.
With a biscuit cutter, cut out 4-5 biscuits.
Vegan Egg Wash
- 2 tbsp maple syrup
- 2 tbsp vegan milk
Combine the vegan egg wash and liberally brush on top of biscuits.
Decrease the oven to 400F and bake biscuits for 12-15 minutes, or until the tops are lightly browned.
