What is the first thing that pops into your head when you think of churros?

Is it that loud crunch you hear after the first bite? Or the cinnamon sugar that sweetens your taste buds? Or the signature ridges that make it fun?

I wish I could say all three but it’s none of the above. For me, I think of amusement parks. It’s probably because I had my first churro at Disneyland. My family and I loved them!

Now, whenever I am at an amusement park or carnival, an order of at least 7 churros is mandatory! Isn’t it amazing how a certain type of food can be closely tied to an activity?

Churros

Now you can bring the carnival to the comfort of your own home with these churros. It’s so simple and quick, and most importantly, there’s plenty to go around. Seriously, churros wouldn’t be churros without friends and family around!

There are so many overcomplicated recipes with eggs and butter/oil but authentic churros are typically vegan and only require 4 ingredients: flour, water, oil and sugar.

Liberally dip these churros into a creamy almond chocolate sauce and coat them with toasted sliced almonds. But feel free to incorporate other nuts or flavors as you can’t go wrong with these crunchy churros!

  • Churros are best enjoyed warm, right out of the fryer.

VEGAN CHURROS (ALMOND CHOCOLATE DIP W/ SLICED ALMONDS)

Dough

  • 1 cup water
  • ½ tbsp coconut sugar
  • ½ tsp salt
  • 1 tbsp oil

Combine ingredients in a pot over medium high heat. When the mixture comes to a boil, turn heat off.

  • 1 cup all purpose flour

To the pot, add flour and mix. The mixture should form a ball and will look a bit like mashed potatoes. Transfer the dough into a piping bag with a star tip. (I used the Ateco 829 tip.)

Heat cups of oil in a fryer or deep pot to 350 F. If you don’t have a thermometer, test the oil by placing a tiny piece of dough into the oil. If the dough sizzles, the oil is ready.

Pipe strands of dough directly into the oil and let it fry for 3-4 minutes, or until all sides are browned.

Alternatively, pipe dough onto parchment paper and transfer piped dough into oil. Note, the ridges will be lost on one side. Drain the churros with paper towel and set aside.

Cinnamon/Sugar mixture

  • ½ cup coconut sugar
  • 1 tsp cinnamon

Combine sugar and cinnamon together on a wide plate. Roll churros into the sugar and cinnamon mixture.

Almond Chocolate Sauce

  • ½ cup almond milk
  • ½ cup dark chocolate, roughly chopped
  • 1 tbsp almond butter

Heat almond milk on a stove top until bubbling or in a microwave for 60 seconds. Pour warm milk into chopped dark chocolate and stir. Add in almond butter and continue to stir.

  • Sliced almonds, roughly chopped

Coat the chocolate covered churros with sliced almonds and enjoy!
