With one taste, this luscious vegan chocolate “buttercream” frosting will be on all your baked goods – vegan and non-vegan ones too!

Vegan Chocolate Buttercream

Do a quick google search and majority of vegan frostings use coconut milk as it’s base. I do love coconut milk but it’s high saturated fat content prevents me from consuming too much. I have inherited high cholesterol so I need to be cautious as saturated fats can raise those levels higher!Vegan Chocolate Buttercream

Instead, I use sweet potatoes as it yields the same texture without the added fats and calories. Just mash your baked or steamed sweet potato and mix in the rest of the ingredients: cocoa powder, maple syrup, almond milk, and almond butter! It’s that fast and simple. Also, don’t worry about the frosting tasting like sweet potatoes because the cocoa powder and maple syrup overpowers any sweet potato flavor.  

Pair this frosting on your favorite cake or on my fluffy, oil-free and refined sugar-free vegan chocolate cake!


quick notes

  • Before assembling your cake, make sure your cake has been sitting in the refrigerator for at least 2 hours and your frosting is room temperature.
  • This frosting is delicious on its own too. Try dipping strawberries or apples in it or spreading it on toast for a quick and healthy snack.

VEGAN SWEET POTATO CHOCOLATE BUTTERCREAM

  • 1 medium size sweet potato

Either bake or steam your sweet potato until a fork can easily pierce through them. This step is important because how cooked your sweet potato is determines the texture of your frosting. You almost want to over-bake or over steam them so they mash down easily. I baked my sweet potato in a 400 degree oven for 45 minutes.

Once cooked, let the sweet potato cool. Carefully peel it’s skin and mash with a fork. You should have about ½ cup of cooked sweet potato.

  • 2 tbsp maple syrup
  • 3 tbsp cocoa powder
  • 1 tbsp almond milk
  • 1 tbsp almond butter
  • Pinch of salt

Add in the remaining ingredients to the mashed sweet potato and mix well.

To get this extra creamy, give the frosting a whisk with a hand mixer before frosting your cake.
